This is the most famous and highly regarded red grape in Georgia. Spaeravi produces BIG wines, high in tannin, acidity, alcohol and body. Some producers use oak to soften the tannins however this can often distract from the distinctive features of the grape. It is grown throughout Georgia with Kakheti being a key region. Qvevri use is common with between 1 and 4 months of skin contact.

 

Grape Characteristics.

Saperavi translates as to dye or to colour, this is because it is a highly coloured grape variety with high levels of anthocyanins. It is produced in all sweetness levels and as a fortified wine. During the Soviet Union rule, sweet wines were popular and they are still consumed in Russia today. The wines have flavours of plums, black cherries, violets and with age, they can develop meaty and smokey notes. 

Key Regions.

The Kakheti region in eastern Georgia is the most important area of Saperavi.

 

Permitted Georgian PDO’s that Saperavi can be used in they are all within the Eastern region of Kakheti.
