Sweet wine can be a wonderful drink packed with concentrated flavours, rich body and intensity but it must have a high enough acidity to prevent it from becoming flat and flabby.

There are a number of different methods of producing sweet wine the most common are noble rot, ice wine, late harvest and drying the grapes. Each method is focused on concentrating the sugars by removing the water in the grapes. This creates an oozy, thicker juice when the grapes are pressed. Another method is stopping the yeast from fermenting until dry leaving sugar in the final wine.
